Winemaking isn’t just about a recipe. It’s a constant quest to perfect an ages-old profession, an uncompromising commitment to quality and the belief that each vintage should surpass the previous one, through careful grape-processing practices.
SUSTAINABILITY
Tenuta Polvaro’s production is executed with the lowest environmental impact possible. Testament to its dedication to a sustainable ethos, Tenuta Polvaro obtained the National Quality System Integrated Production (SQNPI) certificate, which evaluates all the means of production and defense of crops from adversity, that are able to minimize the use in the vineyards of chemicals substances and rationalize practices such as fertilization, in compliance with ecological, economic and toxicological principles.
The commitment to sustainability is also evident in the production phase through the significant reduction of chemical treatments, thanks to mechanical practices such as the removal of noxious weeds, which at the same time enhances the oxygenation process of the soil. Each year, after every harvest, the soil is de-compacted to fortify the roots and the vines, in order to ensure strong and healthy growth.
The ecological fermentation phase takes advantage of the CO2 naturally produced in the state-of-the-art Mythos tanks that significantly reduce energy consumption.
